How to Make Grinch Truffles

  1. Make The Middle Mixture: Crush the Oreos into fine crumbs and combine with the cream cheese spread until a thick mixture forms.
  2. Form Truffle Balls: Scoop the mixture into balls, roll them smooth, and place them on a baking sheet. Chill for 30 minutes to an hour or until firm.
  3. Melt: Microwave the vanilla almond bark for 1 minute and then stir well. Continue to microwave in 15-30 second increments until melted.
Pro Tip: This should take about 2 minutes total. Be sure to stir in between each heating so that the bark doesn’t seize up.
  4. Color and Coat: Stir green gel food coloring into the melted almond bark. Dip the truffle balls, one by one, until fully covered. Place a heart sprinkle onto each truffle and then return to the refrigerator for 30 minutes to an hour, until the coating is fully hardened.
  5. Serve: Serve cold or at room temperature. Enjoy!

Tip From Our Recipe Developer

  • You can substitute your favorite Oreo cookies instead of regular ones if you would like.
  • You can use regular cream cheese if you wish but you will need to soften it before using. It should be at room temperature, and you will likely need less than ½ cup.
  • You can use any heart candy or sprinkle you like. You can also decorate these with other holiday sprinkles or leave them plain if you prefer.
  • It is easier to combine the Oreo crumbs and cream cheese spread with your hands rather than with a mixing spoon.
  • Do not use liquid food coloring or the almond bark will seize.

Storage

  • To Store: Store your truffles covered, in an airtight container in the refrigerator for up to 2 weeks.
  • To Freeze: Freeze your truffles, well-wrapped and in a freezer-safe bag or container, for 3-4 months.

Why Did my Chocolate Sieze When I added the Food Coloring?

The type of gel food coloring really matters. I recommend double-checking and ensuring that the food coloring is oil-based or powdered food coloring. It’s essential that you avoid contact with water at all costs. Even a drop of water can cause chocolate to seize. We chose the almond bark to prevent seizing, but if you are still struggling, you may want to substitute white or green candy melts instead.
This is an example of oil-based food coloring.
This is a cheaper Wilton version of a gel-based food coloring too. It might be sold in some stores too.

Frequently Asked Questions

Can I use candy melts instead of almond bark for this recipe?

Yes, you can use green or white candy melts if you prefer. Follow the package directions for melting and dipping. If you use white candy melts be extremely careful about what food coloring you add as they have a tendency to seize up when anything is added to them.

What type of food coloring should I use?

Be sure to use GEL food coloring or an oil based food coloring for this recipe. If you use liquid food coloring it will likely cause your white chocolate coating to seize up and it will be thick and won’t coat the truffles well.

How should I store my Truffles?

Due to the cream cheese in these truffles, it is best to store them in the refrigerator or freezer. They will be fine for several hours at room temperature but you may notice that the bottoms get a little wet. Store them well-covered or in an airtight container in the refrigerator for up to 2 weeks. You can also freeze them for 3-4 months, if they are well wrapped and stored in a freezer safe bag or container. They can be thawed in the refrigerator or eaten frozen, though they may be a bit hard to bite. They can be served chilled or at room temperature.

Why use a cream cheese spread instead of regular cream cheese?

Using a cream cheese spread instead of regular cream cheese makes everything much easier because you don’t have to warm it to room temperature or soften it at all. You can use it right out of the refrigerator and it will work every time!

What is the hardest part of this Easy recipe?

Making the green coating is probably the hardest part of this process. Make sure that you are using a dry bowl to melt the vanilla bark and be sure that the food coloring you are using is oil based or a gel. Never use regular liquid food coloring or your chocolate will clump up and seize. If you are having trouble finding a green food coloring that will work you can usually find green candy melts at a craft store.

What is the best way to dip truffles in chocolate?

The best method to coat these truffles in almond bark is to use a fork and gently tap any excess chocolate on the side of the bowl. I like to use a toothpick to remove the excess melted candy from the bottom of the fork and then gently push the ball onto the baking sheet.
